Beach Trip

For our Christmas present from my grandparents they decided that all of my moms family would go to Rock Port. We are leaving Saturday. I'm SO excited. Both of my mom's sisters families are going, my grandparents and my moms aunt, uncle and cousins are going. We are going out on a huge boat to go deep sea fishing. I really want to catch a shark. We will be gone most of next week because my dad took off all week. All of us are leaving Rock Port Wednesday and then my family and I are going to our ranch but I don't know when we are coming home. I can't wait to go jump in the ocean. I will post pics when we get back.

Recipe of the Week

Recipe of the Week - Green Bean Bundles
Green Bean Bundles
2 Cans whole green beans
1 lb bacon, cut in half
Brown sugar

Roll 4 or 5 green beans in 1/2 slice bacon, until all are used. Place in casserole dish. Sprinkle liberally with brown sugar. Bake uncovered at 350 until bacon is done.

Recipe of the Week - Blueberry Coffee Cake

Blueberry Coffee Cake
This takes a spring- form pan.

Combine 2 Tbl. flour and 2 Tbl. sugar. Use this to coat two cups berries.
Mix:
1/2 cup brown sugar
1/3 cup flour
1/8 teaspoon nutmeg
1/2 teaspoon cinnamon
1/4 cup butter
This is for the topping

Mix for batter:
2 cups flour
2 Tbl. baking powder
1/2 teaspoon salt.

Cream:
1/4 cup butter
3/4 cups sugar.

Add:
1 egg
1 teaspoon vanilla
1/2 cup milk

Mix with the flour, baking powder and salt. Add berries and stir gently.
Place in 8 x 9 spring- form pan. Put topping on. Bake @ 375 for 55 to 65 minutes.

We stopped at a huge field that had lots of blue bonnets and yellow flowers on our why back from the Housten stock show. It was soooooooooooooooo Pretty.

Recipe of the Week - Kayla's Cheese Mashed Potatoes

Kayla's Cheese Mashed Potatoes
Make mashed potatoes. Put 1 cup of mashed potatoes in a bowl. Then add grated cheddar cheese. Warm in the microwave until the cheese is melted and the potatoes turn orange. Add sour cream and warm for 15 seconds. Then add one dollop of sour cream. Makes one serving.
